Former pilot Pantelis Panteli now makes traditional Cyprus’s Halloumi cheese with ewe’s milk. He fights against industry which now prefers using cow’s milk.
Panteli’s production of the ‘Kouella’ brand is not too big but it became very popular. The debate over Halloumi’s ingredients led to protests among farmers and worries about production. Officials plan to delay full compliance with regulations until 2029.
Some farmers argue that it is necessary to choose the right milk to suit international tastes, but others, like Panteli, prefer to keep traditions alive.
