A former pilot Pantelis Panteli loses his job. He now makes traditional cheese in Cyprus.
The cheese is called Halloumi. It is popular worldwide. Panteli uses ewe’s milk. Ewe is a female sheep. Its milk tastes different. Panteli does not make a lot of cheese, but people love it. Most farmers use cow’s milk. They say that people in the world prefer cow’s milk.
Farmers worry about new rules. They delay them. The new rules will be in 2029. Some farmers want to change the cheese. But Panteli says no. He wants to keep Cyprus’s tradition alive.
